Boomfy Sweet Potatoes

The perfect accompaniment to a Thanksgiving meal!

Preparation time: 20 minutes

Cooking time: About enough time to put your feet up and watch a movie (1 hour 40 minutes)

Ingredients

  • 1.75L of flat Coca-Cola (open the bottle two days before to lose all the bubbles)

  • 2kg of sweet potatoes

  • 100g brown sugar

  • 150g of butter

  • A box or two of Boomf (in keeping with the Thanksgiving theme, we chose a box with photos of people and things we’re grateful for)

Step one – the bit before the cooking bit

Wash and peel the sweet potatoes and place in roasting dish. Cut into medium sized chunks (too small and they get too mushy and too big and it takes forever to cook them). Pour in flat Coca-Cola till the sweet potatoes are half-covered. Cut the butter into small chunks and place over the sweet potatoes. Sprinkle brown sugar over potatoes.

Step two – the cooking bit

Cover your creation in tinfoil and stick it in the oven for an hour and 15 minutes (set a timer in case that movie is really good). Peel yourself away from the screen every 30 minutes to turn the potatoes around a bit.

Step three – the bit more cooking bit

Take sweet potatoes out after 1 hour 15 mins. Pour out some of the coke, leaving the potatoes bathing in approx. a cm of coke. Bin the tinfoil and make sure your sweet potatoes are soft and place them back in the oven for another 20 minutes.

Step four – the fun bit

Pour out remaining Coca-Cola Cover and mentally prepare yourself for the masochistic task of taking Boomf out of the packet and not immediately stuffing them in your mouth. Place the Boomf over the sweet potatoes and turn the oven up to 220 degrees C or 428 degrees celsius. Place the sweet potatoes back in the oven for a couple of minutes until the Boomf go a bit gooey.

Step five – the eating bit

Serve immediately from the oven and enjoy! Await gasps of pleasure and delight from everyone around the table. Share this recipe with your most appreciative guests; assign washing up instructions to those less so.
